With a loan from his father, he completed a Master of Public Administration at New York University's Wagner School in 1976 while working part-time as a budget analyst at Fordham.
He then became a housing coordinator setting up Section 8 housing in Mount Vernon and later spent two decades as a marketing executive in the hospitality industry, including at subsidiaries of Nestlé and ITT.

He served in the New York State Assembly from 2005 to 2012, representing the 91st district, and in the New York State Senate from 2013 to 2017, representing the 37th district. In 2017 he defeated Republican incumbent Rob Astorino to become Westchester County Executive, and he was re-elected in 2021.
In the June 2024 Democratic primary for New York's 16th congressional district, Latimer defeated incumbent Jamaal Bowman by 58.6% to 41.4%, then won the general election against Republican Miriam Flisser.
Sworn in on January 3, 2025, he serves on the Committee on Foreign Affairs and the Committee on Small Business.
George Latimer is seeking re-election in New York's 16th congressional district, which covers southern Westchester County, including Yonkers, White Plains, New Rochelle and Rye, along with Co-op City in the Bronx. He was elected with 71.5% of the vote in 2024.
